This marinade focuses on traditional Mediterranean ingredients that will infuse your chicken with incredible flavor and keep it juicy. I make a batch of this chicken when meal prepping for Mediterranean bowls on the fly. For the bowl ingredients, I recommend a good lettuce base, purple onion, sweet bell pepper, feta, carrots, cucumbers, pepita seeds or other nuts, and anything else that suits your fancy. For the dressing I take hummus with some lemon juice and water to thin it out into a dressing.

1 tablespoon Dried Parsley
1 teaspoon Dried Thyme
.25 cup Extra Virgin Olive Oil
3-4 cloves Garlic
.5 teaspoon Ground Cumin
.25 cup Lemon Juice
.5 teaspoon Paprika
2 tablespoons Plain Greek Yogurt 0% Fat
.5 teaspoon Salt

Steps

  1. In a bowl or a resealable plastic bag, whisk together all the marinade ingredients until well combined. If using Greek yogurt, mix it in thoroughly.
  2. Add your chicken (boneless, skinless breasts or thighs work well, cut into bite-sized pieces or left whole for grilling/baking) to the marinade, ensuring it's fully coated.
  3. - For quick marinating (if you're short on time), at least 30 minutes will impart some flavor. - For best results, marinate in the refrigerator for at least 2-4 hours. - You can marinate for up to overnight (8-12 hours), especially if you're not using yogurt. If using yogurt, you can marinate overnight, but avoid going much longer as the acid can start to break down the chicken too much.
  4. When ready to cook, remove the chicken from the marinade (discard any remaining marinade) and grill, pan-fry, bake, or air fry until cooked through and golden brown.
