This marinade focuses on traditional Mediterranean ingredients that will infuse your chicken with incredible flavor and keep it juicy. I make a batch of this chicken when meal prepping for Mediterranean bowls on the fly. For the bowl ingredients, I recommend a good lettuce base, purple onion, sweet bell pepper, feta, carrots, cucumbers, pepita seeds or other nuts, and anything else that suits your fancy. For the dressing I take hummus with some lemon juice and water to thin it out into a dressing.

Steps
- In a bowl or a resealable plastic bag, whisk together all the marinade ingredients until well combined. If using Greek yogurt, mix it in thoroughly.
- Add your chicken (boneless, skinless breasts or thighs work well, cut into bite-sized pieces or left whole for grilling/baking) to the marinade, ensuring it's fully coated.
- - For quick marinating (if you're short on time), at least 30 minutes will impart some flavor. - For best results, marinate in the refrigerator for at least 2-4 hours. - You can marinate for up to overnight (8-12 hours), especially if you're not using yogurt. If using yogurt, you can marinate overnight, but avoid going much longer as the acid can start to break down the chicken too much.
- When ready to cook, remove the chicken from the marinade (discard any remaining marinade) and grill, pan-fry, bake, or air fry until cooked through and golden brown.
