A tasty, citrusy, light fish with minimal prep and maximum flavor. Flaky and buttery, this cod will be something that even your kids will eat. I usually pair this with a lemon couscous and crispy brussels sprouts. Tools you'll need are: an oven safe dish (preferably glass), cutting board, small bowl, and a knife. With prep time included, this should only take 30 minutes at most. Since cod doesn't need long to cook and can easily be over-cooked, oven time will usually only need 10-15 minutes if the cod is thawed or fresh and depending on oven temperature. ~The Creator

Ingredients

4 tbsp Butter
4 Tbsp Cajun seasoning
4 fillets Cod - thawed
6 cloves Garlic
2 Lemons
1 Onion

Steps

  1. Heat oven to 400 degrees. Peel and mince garlic, slice onion and lemons.
  2. Melt butter in microwave making sure it doesn't explode. Add minced garlic and your Cajun seasoning.
  3. In your oven safe dish, add a layer of onions and lemons to help support the fillets.
  4. Add your fillets and top generously with the butter mixture making sure you coat the whole fillet. Top with a lemon slice each and add the rest of the onion slices around the fish.
  5. Put the dish in the oven at 400 degrees and bake for 10 minutes or until the fish becomes opaque and flaky. Take out and rest for 5 minutes. Serve with your favorite sides and a lemon slice.
